COME BITE THE APPLE COOKIES
MAKES ABOUT 20 COOKIES
Ripe, red apples, whole raisins, and freshly ground cinnamon, sweetened with raw agave nectar and dehydrated into soft, homemade style cookies.
2 pounds of cored red apples (5-6 apples)
1 cup agave nectar
1 ¾ cup ground almonds
1 ¼ cup raisins
¼ cup cinnamon
In a food processor, slice half of the apples using the slicing blade. Transfer the sliced apples to a mixing bowl. Slice the remaining apples in the food processor using the shredding blade, then add the shredded apples to the sliced apples in the mixing bowl. Add the agave nectar, ground almonds, raisins, and cinnamon to the bowl, and mix well with a spatula.
By hand, press the mixture into approximately twenty round, flat cookies approximately 3” thick and lay them on dehydrator sheets. Dehydrate at 105° for approximately 24 hours.
