SALAD ROLLS
Ingredients
Bok Choy / Spinach
Green Beans
Red or Green Cabbage
Green Onions
Cilantro (or other Fresh Herb of choice)
Avocado slices
Carrots
Rice Papers
Favorite dressing or dipping sauce
This recipe is easy and easily customized to your favorite ingredients!
Simply shred all the leafy vegetables and mince all of the solid vegetables until you have a fine blend going on. Set aside.
Take a rice paper and dip one half in water quickly, then flip and dip the other half. Lay flat on counter. As if a burrito or sushi roll, put a small row of avocado slices and salad filling about 1/3 of the way into the wrapper, leaving a margin on either end so you can fold them in.
Take the edge of the wrapper and fold over the filling, folding the insides in. Fold the sides inward and roll until completely wrapped.
Making salad a finger food! Please note that this recipe is only 99% raw, though, due to the rice papers.
