What Is Beauty To You?
What is beauty to you? Have you ever loved some one who was physically not “your type”, but you found them attractive anyway? What makes this so? Is it their attitude, a kindness in their eyes, a sense of humor or a passion for life? Beauty is all in the eye of the beholder.

We spend so much time on outward appearances, particularly when we are young. We pay little attention to the inside and I don’t mean solely health; I mean the soul, our true self, and not just our body. I find, as we age, who we really are and who we have been in the past years shows up in our face, around the mouth, eyes and forehead. What do you see when you look in the mirror? Do you love what you see or are you critical? Is this face someone you know well, someone you enjoy spending time with, someone who entertains you, someone you can laugh with, and at?

Of course we want to preserve our looks, but we can’t be upset when we see a line or two or even three on our face.  It’s a wake up call to live the best life we can. It’s a call to action. Not to the action of getting Botox injections, buying more creams or getting plastic surgery, it’s a call to action to love yourself for who you are right at that very moment. It’s a call to live, love and enjoy every single moment here and now. It’s a call to put the right food in your body that will sustain you and keep you healthy and vibrant. It’s a call to show YOU some love. Go out for a long walk, take a soothing bath and think about what’s really important in life and be grateful. Don’t sweat the small stuff any longer.

It’s time now, right now, at the age you are now, to realize you can be completely happy, you can roll with the punches when necessary, you can always pick yourself up and recreate a new beginning. You will have loved, you will have lost, but you will always bring new life into yourself. At times life appears to be long and other times so very short. Time is non-existent when you live in the moment and for the moment. Each breath is unique and not all strung together as it sometimes seems. Each breath can bring beauty and joy. Each breath can create a new moment. There will never be a breath like the last one in that very same moment of time. Breathe deeply every day.

Do not regret aging. Stay tuned in to the beauty of the world with each breath you take, in every cloud you see in the sky, in every ocean wave, in every baby, or puppy, in every living tree, plant, insect, animal and most of all in yourself. Be amazed, amused, thrilled, and energized to your beauty inside and out.

Next time you look into a mirror, give yourself a smile and see your true beauty.

Her careers span the gamut from a stand-in for Mary Tyler Moore and the designer behind Valerie Harper's wardrobe on Rhoda; a constume jewelry designer; publisher of an environmental newspaper in Los Angeles; board game inventor; author. She helped start the first film festival in Taos, New Mexico, and has worked with several non-profits to help raise money and awareness about health and environmental concerns. She is also an amazing raw food chef and has recently published a new un-cooking book.

Mimi's Veggie Patty

in my 20’s. You may wonder how that can be; well I attribute it to my diet and lifestyle. Many say genes are the reason why, but I can assure you my family's health history is not something I wanted to emulate.
Granny’s Smoothie

Serves 2

Ingredients:

2 Granny Smith apples, roughly chopped
1/2 cucumber, peeled and roughly chopped
2 handfuls spinach
1 ½ cup pure water

Directions:

Blend in a high-powered blender until smooth. Add ice and blend again if desired.
