CHEF ERICA’S CHOCOLATE MINT CHEESECAKE

Happy Earth Day!!! For my raw dessert submission I made a Chocolate-Mint cheesecake, the chocolate resembling “dirt” and the Mint resembling “grass”. The food coloring I used to dye the mint topping green with is actually liquid mint-flavored chlorophyll. Chlorophyll is our #1 source of oxygen. Without oxygen, humans could not exist. So what better way to say “Happy Birthday” to Mother Earth than with a chlorophyll-rich cake?

Since going vegan, it’s been hard to find a French toast recipe that I enjoyed, so I came up with my own. A fellow vegan blogger tipped me onto using ciabatta bread and it works best. If you don’t have orange extract on hand, use the zest of one orange and one tablespoon of the juice, or just leave it out.

WHAT TO LOOK FOR IN PERSONAL CARE PRODUCTS

I used to think it was safe to buy personal care products from health food stores, but upon further research, I found out many products are not safe at all. To be certified organic, foods are under strict regulations, but there are absolutely no regulations for labeling personal care products “organic.” The products flaunt words such as “natural” and “organic” in big lettering on the front label, but if you scan through the tiny words listed in the ingredients section usually found on the back label, you will see many words that look like they belong in a science experiment.
