Happy Earth Day!!! For my raw dessert submission I made a Chocolate-Mint cheesecake, the chocolate resembling “dirt” and the Mint resembling “grass”. The food coloring I used to dye the mint topping green with is actually liquid mint-flavored chlorophyll. Chlorophyll is our #1 source of oxygen. Without oxygen, humans could not exist. So what better way to say “Happy Birthday” to Mother Earth than with a chlorophyll-rich cake?

Since going vegan, it’s been hard to find a French toast recipe that I enjoyed, so I came up with my own. A fellow vegan blogger tipped me onto using ciabatta bread and it works best. If you don’t have orange extract on hand, use the zest of one orange and one tablespoon of the juice, or just leave it out.
Watch as Sunny prepares this delicious and simple meal.

Here’s a soup that’s great served cold on a hot summer day or warmed up when the weather cools off. Young Thai coconut water and meat provides the broth for this soup while the peppers and the miso provide the flavor. Fresh prepared coconut mylk can be substituted for the young Thai coconuts.
I used to think it was safe to buy personal care products from health food stores, but upon further research, I found out many products are not safe at all. To be certified organic, foods are under strict regulations, but there are absolutely no regulations for labeling personal care products “organic.” The products flaunt words such as “natural” and “organic” in big lettering on the front label, but if you scan through the tiny words listed in the ingredients section usually found on the back label, you will see many words that look like they belong in a science experiment.
Wheatgrass, a potent natural healer, has been remarkably effective for thousands of my patients since I began using it therapeutically in 1995. It has also made my job a lot easier because it often heals when nothing else works.
My 82-year-old mother, my rock and my hero, opened her eyes just as my father slipped into her hospital room. Two days before, we six kids got the word. “Mom’s been in a bad car accident. A truck ran a stop sign at 50 mph, crashed into her car, and flipped it over–twice. She’s okay, but in a lot of pain with serious injuries: broken back, neck, and sternum. Don’t come and don’t call.”
“I am!” are the two most empowering words in the English language.
Not “I will” eat better. Not “I try” to exercise. Not “I can” lose weight. Not “I wish” I had more energy. Not “I should” eat more fruits and vegetables. Not “I could” live without meat and cheese (if it weren’t for my meat-lovin’, cheese-lovin’ man.) Not “I would” drink fresh fruit and vegetable juices (if I only had the time).

I was born in 1938, and guess what, I feel like I’m in my 20’s.
We age, that’s all there is too it, but the way we age is something we have control over. Yes, control. It’s up to us if the food on our plate, and in our mouth for a few seconds is worth consuming. After eating, does the food make you feel alive, or does it make you tired and ready for a nap? Does the food move quickly through your body, or does it sit there in your stomach trying to digest?
